Zippy Saturday Vegetable Stew

1 medium sized onion
3-5 garlic cloves
5 large champignons
1 paprika
1 large carrot
1 broccoli
Water
2 dl (dried) red lentils
White wine
Herbes de provence
Salt
Black pepper
Rice for serving
Directions
Chop the onion, garlic and fry them in a large pot for a few minutes. Add the roughly chopped champignons and let it all fry for a few more minutes.
Add the roughly chopped paprika, carrot and broccoli, and cover the vegetables in water. Wait for it to boil up, and then add the lentils, some splashes of white wine and the spices. Put on the lid and let it all boil until the lentils are done and most part of the water is gone. Taste it and add some more spices if necessary.
Serve the stew with rice and some bread. Personally I prefer to eat this dish with a baguette, but since I was too lazy to go to the store yesterday, I was satisfied with my choice of müsli bread and cheese.
