Salmon Couscous Salad

A couple of days ago, we received yet another recipe from one of our readers. We would like to give Malin a very big "thank you!" for her contribution of a very nice and fresh couscous salad, which will surely be a reoccurring dish at the Bijltjespad tables. Well, enough of the rambling, let me now introduce to you:

Salmon Couscous Salad

Ingredients (3-4 servings) 
250 g salmon
3 dl couscous
Lettuce
4 tomatoes
1 bell pepper
1/2 cucumber
White cabbage
Lemon juice
White wine vinegar
Sour cream
Honey
Mustard
Olive oil



Dressing (use whatever spices you like, anything works. But these are the once I used):
4 dl sour cream
Honey
3 garlic cloves
Paprika powder
Cayenne pepper
1 tablespoon of mustard
Dill

Just mix and taste! :D 

Salmon:
Put some olive oil in a frying pan and heat it up. When hot put the salmon in. 
Fry it with salt, pepper and splash some lemon juice on it. When the salmon has a nice golden colour, lower the heat and leave it alone for a while. When it starts to fall apart it's ready. Mash the salmon with a fork into small pieces.

Now for the couscous:
Take 5 dl of water in a pot and add salt, pepper, cayenne pepper, lemon juice, paprika powder and a splash of white whine vinegar. Let it boil. When it's boiling take the pot off the stove and add the couscous. Leave under lid for about 4-5 minutes and let it distend. Then stir the couscous with a spoon so the spices are mixed. Then add some honey and stir it once more. 

Cut the vegetables and mix them together into a regular salad. When everything is ready you mix the salad, the salmon and the couscous in the same bowl and stir. Serve the dish cold with the dressing.

Sweet, sour and spicy; what can possibly go wrong?! :)
